Pastry 8 c Flour 4 ts Salt 2 2/3 c Shortening 1 c Water Filling 25 Apples, tart, peeled; sliced 3 c Sugar 1 pn Salt 4 ts Cinnamon 1/2 c Butter; melted Glaze 1 c 10x sugar 2 tb Light cream Preheat oven to 400 degrees. Mix flour and salt in large mixing bowl. With pastry blender, cut in shortening until particles are pea-sized. Sprinkle with milk, a little at a time, mixing with fork until all flour is moistened. Gather dough together and press firmly into a ball. Roll out half dough to fit bottom of 12x18 pan, allowing for sides. Mix all filling ingredients together and pour into pastry shell. Roll out remaining dough, cut air vents, and place on tip. Crimp bottom and top crusts together and bake for 50 minutes. If crust is browning too fast and apples aren't cooked, reduce heat to 350 degrees and continue baking until done. Cool about 15 minutes and then glaze. Make glaze by mixing ingredients thoroughly, adding just enough cream to make thin frosting. Drizzle over wark applejack. Anna Weishaar. ----- |

3/4 c All-purpose flour 1 ts Baking powder 1/2 ts Ground cinnamon 1/4 ts Salt 1 Egg 3/4 c Brown sugar, packed 1/4 c Milk 1 ts Vanilla extract 1/2 c Peanut butter 1 c Apples; chopped Confectioner's sugar; sifted Recipe by: Jo Merrill Sift flour with baking powder, cinnamon and salt. Beat egg until light and gradually beat in sugar. Stir in milk, vanilla and peanut butter. Fold in flour mixture and apples. Spread in greased square 8x8x2 inch pan. Bake in preheated 350 degree oven for 30-35 minutes. Cook in pan for about 5 minutes. Cut into 24 finger shaped pieces. Roll in sifted confectioner's sguar. Jo Merrill ----- |
